Avocado and Chicken Sandwich

This is an easy sandwich to make. All you do is mash an avocado with shredded, cooked chicken and season with fresh pepper (optional). It is easier than my chicken salad, which I love but doesn’t have mayo or sour cream (yogurt) and is a tad bit healthier if that matters to you. Add lettuce and tomato for extra flavor.
As you can see from the photo, I was dining curbside in my car on a sunny afternoon.
