Poor Man’s Beef Stroganoff

I loved this dish as a kid–Beef Stroganoff! It was one of my mom’s quick, just get something on the table meals. This may not be one of the fanciest beef stroganoff recipes you can find, but I love it. I enjoy this dish with some Aunt Nellies Harvard Beets and a salad with Italian Dressing(the Good Seasons Brand you shake up yourself).
Take it for a leftover lunch the next day!
1 pound of ground beef
1/2-1 diced onion
1 can of cream of mushroom soup
8 oz. sour cream
Salt and Pepper to taste
2-3 c. Egg Noodles
Cook onions and ground beef together.
Crumble ground beef while cooking.
Drain ground beef and onions.
Replace ground beef and onion back into skillet and add salt and pepper to taste.
Start boiling egg noodles.
To the ground beef mixture add 1 can of cream of mushroom soup and stir together.
A couple of minutes before ready to serve add sour cream to ground beef mixture and stir in.
Serve over egg noodles.
